Beach House Meals
Every year the Margareed family (and extended family) does a HUGE trip to OBX. We have been doing this trip for a little over a decade and love the memories and time with extended family. As you all know, I am frugal so we only eat out a few times each week which saves us a lot of money. I plan a menu for the entire week taking into account food allergies, preferences, and budgets. Then I split up the grocery list by family so everyone shops for their portion.
Here is our menu for this trip:
BREAKFAST (no one wants to get up early to cook so it’s a mix of easy and hearty)
– eggs
– bacon
– bagels w/cream cheese
– cereal w/milk
– waffles
LUNCH (easy things to make quickly OR take to the beach)
– sandwiches
– chicken tenders with a fruit and veggie platter
– hot dogs
– hamburgers
DINNER (we always do family style and like to have a good dinner each night)
Sunday- this is arrival night we always order pizza and salad
Monday- Taco Night! We have chicken and steak tacos, all the fixings, rice and beans
Tuesday- Seafood Night! Crabs, shrimp, fish, muscles, clams and scallops with corn on the cob and pasta salad
Wednesday- Eating out at a restaurant! This year we are going to Steamers!
Thursday- Grill night! We grill steaks, picked out from The Butcher’s Block, and asparagus with fully loaded baked potatoes
Friday- Leftover night
Saturday- Dinner on your own
Other meal ideas we have used in past years:
– chicken Teriyaki bowls
– lasagna, garlic bread and garden salads
– build your own pasta bowls (2 types of noodles, 3 types of sauce and 3 proteins), garlic bread and salad
– slow cooker chili with cornbread and cinnamon rolls
– hamburgers, hot dogs, pasta salad and fruit
